Hello friends.. aaj main apko chainsoo bnana sikhaugi jo ek uttrakhandi recipe hai, jiska nam hai chainsoo. dosto yeh black urad ki daal ko pis kr bnai jati hai or khane me bahot hi tasty hoti hai , chainsoo ko hum rice k sath khate hain, iske alawa isko roti or prantha k sath bhi khaya jata hai..
dosto jo bhi iss blog me visit krege to unme se kuch uttrakhandi to jarur honge to vo log chainsoo ke baare me na jante ho aisa to ho hi nhi sakta.. hmare uttarakhnad me bahot si recipe hoti hain jese chainsoo, faanu, jhangora ki bhaat, gath ki daal ke prathe, mandwa ke aate ke parathe, pahari namak jisko green chilli or green coriander se bnaya jata hai , gaderi ki sabji, singhal recipe, pahadi aalu recipe, meat curry recpie , jhnagore ki kheer, kandeele ka saag much more..

Ingredients
- kala urad daal ( black urad ) - 1 cup
- onion - 1 chopped
- tomato - 1 chopped
- garlic - 4-5 cloves
- ginger - half inch grated
- coriander powder( dhaniya powder) - 1 tablespoon
- red chilli powder(laal mirch powder) - 1 tablespoon
- turmeic powder( haldi) - half tablespoon
- cumin seeds( jeera) -half tablespoon
- salt - as per taste
- musturd oil or refind or ghee - 2 tablespoon
- coriander leaves( dhaniya patta) for garnishing
Preparation
1.Sabse pehele urad dal ko saaf kar ke use mixer me pis le, jyada fine na kre.
2. Ab ek kadai lijiye, use gas par medium flame par rakh dijiye, kadai garam ho jaye to usme
musturd oil ya ghee ya refiend jo bhi ap use karte ho khane me.. oil garam ho jae to usme jeera dal de or use crack hone de, fr isme chopped onion dal de or tb tk fry kre jab onion ka color brown na ho jae.. yaad rhe jla mt dena๐
3. onion fry ho jane k bad isme pisi hui daaal ko fry kre or tab tak fry kre jab tk ye light golden brown color ki na ho jaye.. iss stage me bahot achii smell aane lagti hai๐, daal fry hone k bad isme coriander powder, red chilli powder, turmeric powder or kte hue tamatar daal de or achhe chlaye.. or 2 min tak tak pakne de.
4. tamatar gal jane k bd isme paani dale , jitna patla ap rakhna chahe utna rakh skte hai, qki paani dalne par daal foolti hai, uska volume increase ho jata hai.. ab salt dale apne according jitna ap pasand karte hain or ek bartan se dhakk ke 7-8 min achhe se medium flame par pakne dijiye.
5. chainsoo ready ho chuka hai ab, last me usme dhaniya ke patto se garnish kar diye.. or chahe to last me ap tadka bhi de sakte hain- uske liye ek bartan lijiye jisme bhi ap tadka tyar karte hain.. usme 1 chammach oil dale garm hone dijiye, fr usme heeng ek pinch daale or saabut laal mirch dale , jese mirch thodi dark brown ho jaye, turant daal me tadka lga dijiye or fir dhaniya patta dale.๐
ready hai ap ki tasty tasty chainsoo.. ise cooked rice , roti kisi ke sath bhi khaiye or khilaye..
